mango salsa!

ryan makes a great, simple mango salsa that we use with pork tenderloin, in chicken salad wraps, and would be tasty with a white fish! suuuuper easy – chopped ripe mango, chopped tomatoes, scallions and/or chive (we used fresh chive from jeri’s garden), lemon juice (to taste), 1 tsp. crushed red pepper flakes, salt (to taste), and you can add cucumber too if you like (we added it to our chicken wraps, since we had a bit in the fridge – chicken, mango salsa, shredded cabbage and cucumber + hot sauce = cheap and yummy).
