[photo by me] i made some biscuits for ryan and i to have with our lunches this past weekend, and with the last few we had left, we made strawberry shortcakes! i used an extremely quick & simple biscuit recipe from joy of baking:
preheat oven to 400˚F
2 1/2 cups of flour
2 1/2 tsps baking powder
1/2 tsp salt
1 tbsp sugar (optional – we left this out)
1/2 cup cold, unsalted butter, cut into small pieces
3/4 cup milk
whisk together flour, baking powder, sugar and salt and cut in the butter until the consistency is that of “course crumbs”. lightly beat the egg before stirring it in with the flour/bp/s/s/butter mixture. place on lightly floured surface and knead until it is a smooth dough. roll out the dough to desired thickness (minimum 1/2 inch thick) and cut out biscuits (i’m ghetto and don’t currently have a round cookie cutter, so i just used the lip of one of my juice glasses). Bake for 10-15 minutes until a toothpick can come out clean from the centre of one of the biscuits aaand DONE!
we served with fresh, maple-sweetened hand-whipped (as i also do not own an egg beater) cream (ryan’s creation) and fresh strawberries! a little messy to eat, but a sweet and summery treat!
