[photos by me.] i made the barefoot contessa’s “panko-crusted salmon” for ryan and i last night. the recipe is from her new book that mom gave me for christmas, “how easy is that?” and doesn’t seem to be in her online collection so i’ll write it out, its very simple!
“panko-crusted salmon by the barefoot contessa
2/3 cup panko (japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
2 tablespoons olive oil
4 salmon fillets
2 tablespoons dijon mustard
lemon wedges, for serving
preheat oven to 425˚F. in a small bowl, mix the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon of pepper. stir in olive oil. brush the top of the salmon fillets with the dijon mustard and press the panko mixture generously on top of the mustard. bake the salmon until it is nearly done (10-15 minutes), remove then cover with aluminum foil to rest (and finish cooking) for 5-10 minutes.”
we used those frozen salmon fillets that you can get 2 for 1 at Safeway, so they didn’t look spectacular, but they did the trick! really easy prep, very fast cooking time and very tasty! we will definitely have this dinner again!
